Easy Sour Cherries in Light Syrup with 3 Ingredients

All great jams, jellies, and sauces start with fruit. It should always be the first ingredient. You know, unlike store-bought jams that usually list sugar as their first ingredient. This sour cherry sauce starts with 9 pounds of beautiful, red, sour cherries.

What are sour cherries?

Sour cherries are, well, sour. They can be slightly sweet but always have a distinct tart flavor. While regular cherries are enjoyed raw, these are best eaten after being cooked down. They make the perfect filling for a delicious, homemade cherry pie.

Where to find sour cherries?

Be on the lookout for these sour cherries, because they aren’t always readily available at your local grocery store. Your best bet might be to look for a farm that allows you to pick your own sour cherries.

How is this sour cherries jam/sauce different from most other jams?

You’ll notice that many of the jams I make combine sugar and fruit. Those two ingredients are cooked on low flame for an hour or so until they are well combined. With this particular jam, I like to make a light syrup first from water and sugar. This syrup is then poured on top of the cherries for another boil. The cherries will still hold their shape instead of turning into a mush of broken fruit.

Ingredients

  • 9 lb sour cherries, washed & pitted
  • 8 lb sugar
  • 4 cups water
  • jars, washed in hot water & ready to use

Instructions

  • In a big pan heat up 4 cups of water and 8 pounds of sugar. Stir occasionally until mixture becomes clear.

  • Put washed and pitted sour cherries in a big pot or dish (heat safe). Pour the clear syrup over the cherries and bring to a boil. Boil for 5 minutes on low heat.

  • Turn off the heat and let the cherries completely cool down.
  • Heat up cherries, bring to a boil and turn off the heat. Let them cool down once again.
  • Bring to a boil one more time. This time don’t need to cool down just put them in the jars.
