Simple Crunchy Napa Cabbage, Carrot, and Almond Salad

Just five well-known fresh ingredients are all you need to make this napa cabbage salad.
- A head of Napa Cabbage
- Carrot
- Green onion
- Slivered almonds
- Sesame seeds
Napa cabbage is a load full of antioxidants and is known to help prevent many types of cancers. In addition, this crunchy and green vegetable is a great source of vitamin K, fiber, and vitamin C, all of which we all need more of right now.
Steps to Making a Crunchy Napa Cabbage, Carrot, and Almond Salad
Whisk all dressing ingredients together in a small bowl and set aside.
After thinly shredding the napa cabbage, add it to a large serving bowl along with shredded carrots, sliced almonds, and green onions.
Toss salad with tossing spoons or your hands until well coated. Taste the salad and add salt and pepper if needed.
Toast Sesame Seeds
To toast the sesame seeds, heat a non-oiled skillet on medium heat. Add sesame seeds and stir continuously for a few minutes until they start to brown. Remove from heat and allow seeds to cool a bit.
Serve topped with toasted sesame seeds, chopped chives, or green onions.

Ingredients
- 1 small head napa cabbage, thinly sliced
- 1 medium carrot, shredded
- 1 cup almonds, slivered / sliced
- 1 green onion, sliced (white & green parts)
- 1-2 Tbsp sesame seeds, toasted
- 1 Tbsp sesame oil
- 2 tsp toasted sesame oil
- 2 Tbsp rice vinegar
- 1½ tsp tamari, or soy sauce
- 1 clove garlic, minced
- 1 tsp honey, or more if you like sweet dressing
Instructions
- Whisk all dressing ingredients together in a small bowl and set aside.
- Thinly slice cabbage and add to a large bowl
- Add shredded carrots, almonds, and green onions, and toss to combine.
- Add dressing to salad and toss until well coated. Use your hands or salad tossing spoon.
