Am I the only one who starts thinking about holiday decorations and holiday food as soon as October ends? Well, if you’re anything like me, you’re probably day-dreaming of all the delicious treats that are devoured throughout the holiday season. I’ll take all the peppermint bark, gingerbread, fudge, and sugar cookies. Please, and thank you!

But, if you’re not dreaming about eating these treats, you’re definitely planning on making some. Perhaps, you’re even looking for some new recipes to try this year. Well, these white chocolate clusters are the perfect holiday treats.

Are Rice Puffs Gluten -Free? 

Most rice crispy cereal is made with just rice (which is gluten free), some also have the addition of sugar and molasses. I suggest to check the ingredients list before buying.  Some rice cereals contain gluten, or made in a gluten facility. and if you are not on a gluten free diet, nothing much to worry about, you can use the kids favorite rice crispy treats for these white chocolate clusters recipes.

How to Store Chocolate Clusters

Chocolate clusters should be kept in an air tight container, away from warm surfaces. You can also keep the clusters in the fridge, and take them out 20 minutes before serving. The longer they stay even just out on the counter the harder they will get. Try to enjoy the chocolate clusters within 4 days of making then.

Why You Need These White Chocolate Clusters In Your Life

They’re so incredibly easy to make. You only need four ingredients (one more if you want the extra chocolatey drizzle on top) and less than an hour (this includes the time it takes the clusters to cool down). So if you’re hosting a holiday party this year, you can quickly make these and focus on your other dishes. But if you’re a guest, these make the perfect take-along.

You can make them ahead of time. Whip these up the night before! Just store in an air-tight container.

You can add, omit, and replace as you like. The recipe is pretty fantastic as it is. But you can tailor this to your exact preference. If you’re not a fan of almonds, you can easily replace them with peanuts, or even pistachios. Don’t want the chocolate drizzle? Try caramel instead – it’s extra festive, or skip the drizzle all-together.

Here’s what you’ll need to make these White Chocolate Clusters:

  • sunflower seeds: raw, unshelled. If you only find the roasted kind, that will work too.
  • slivered almonds: these come pre-cut like that. Which makes it that much easier.
  • white chocolate chips: it doesn’t have to be chips could be just your favorite white chocolate, but I found that chocolate chips melt so fast.
  • crispy rice cereal: If all you got are the kid friendly rice crispy treat cereal and you are not gluten-free, you can use those. For gluten-free option I use the rice cereal.
  • (optional) chocolate chips: milk or dark chocolate work great here, but you the drizzle is optional, so if you don’t have it on hand, no worries.

Is Chocolate Gluten-Free

Pure chocolate is gluten-free. There are however some brand that produce the chocolates in a gluten-free facility or have some add-ins, so check the ingredients on the package.

Steps

Preheat oven to 350F.

On a double boiler, melt 4 cups white chocolate chips.

Toast 2 ½ cups silvered almonds for 3-5 minutes in the oven.

Add the crispy rice cereal, 2 cups sunflower seeds and 2 ½ cups toasted slivered almonds to a large bowl.

Combine.

When the white chocolate has melted, pour it into the large bowl with all the ingredients. Mix it fast and well together.

Prepare parchment paper on a cutting board or baking sheet.

With an ice cream spoon, scoop one spoon-full onto the parchment paper as if scooping cookies. The clusters do not need to be perfect circles.

Leave out on the counter or transfer to the fridge for the clusters to cool.

Optional step: melt ⅓ cup chocolate chips and drizzle over the clusters for nice presentation.

I made these, and they were delicious. I didn’t make clusters but just patted it into a baking sheet (like rice crispies) and then cut into squares, because shaping them into clusters was hard, they wouldn’t stick together well and would fall apart. Next time I will add more white chocolate “glue” to hold them together better because even when I was cutting them they would fall apart. But they were very tasty and I will make again with my tweaks.
