Turkey Patties (Kotleti aka Cutlets)
If you miss the deliciousness of kotleti, but want an updated, healthy version, this recipe is it! I hope you love it as much as I do.
Do you remember ground chicken kotleti? Or kotleti made with ground beef or ground pork?
Turkey wasn’t a type of meat we enjoyed in Ukrainian or Russian kotleti (or katleti) back in the day in the Soviet Union.
But turkey kotleti is a tasty, healthier version. It’s even better during the holiday season when the freshest turkey meat is available.
For those who don’t already know, Kotleti, also known as “cutlets” are crispy, individual meat patties. They are great to serve with a salad and mashed potatoes or as appetizers with sour cream. You can also freeze them for easy weeknight meals.
This gluten-free recipe does not use breadcrumbs but is a comfort food, nonetheless. And, not having to crumble toasted white bread saves prep time!
If you’re looking for a heartier version and don’t fear the gluten or added carbohydrates, dredge the patties in breading before frying.
One of my favorite concepts about this recipe is the fact that all of the ingredients and simple and commonly are already at home. There’s no big necessity to go to the store and shop for unfamiliar ingredients. On your regular grocery run, you can simply pick up some turkey meat and enjoy the simplicity of this recipe.
What do I need to make these turkey kotleti?
Turkey meat: Just like with other kotleti recipes, I like to use dark turkey meat. I find that the patties turn out more juicy and tender. You can purchase already ground meat, or grind the meat yourself at home.
Carrot contains beta-carotene, which supports your eyesight.
Onion is filled with antioxidants that are anti-inflammatory and benefit your immune system.
Along with those ingredients, you will need an egg, salt & pepper, and light extra virgin olive oil.
Steps
Step 1: Prepare Ingredients
Gather the ingredients.
Thinly slice the carrot using a grater and then chop or shred the onion with a food processor.
In a large mixing bowl, combine a pound of ground turkey, grated carrot and thinly grated or shredded onion, 1 egg yolk, and salt and black pepper to season.
Step 2: Prepare the Pan and Form Patties
Combine the meat mixture well.
Step 3: Fry the Kotleti
Heat oil in a large skillet on medium heat for frying the patties.
While the oil is heating up, shape the meat into small meatballs, and then flatten them to form patties.
Fry the patties until each side is a rich, dark golden brown color — about 3-4 minutes per side. Transfer them to paper towels.
Step 4: Handling Leftover Kotleti
Store turkey kotleti in a dish with a lid if you have leftovers. Keep them in the refrigerator for up to three days.
Ingredients
- 1 lb ground turkey, dark meat
- 1 carrot, thinly grated
- ½ onion, chopped
- 1 egg yolk
- 2 tsp salt
- 1½ tsp pepper
- extra virgin olive oil, for frying
