Homemade Superfood Salad with Easy Poppy Seed Dressing
There is this salad kit with kale, pumpkin seeds, dried cranberries, and poppy seed dressing from Costco that every other person picks up, possibly for the poppyseed salad dressing. Without reading the ingredients, it most definitely seems like you are eating healthy, but once you read the long list of what goes into the poppyseed dressing, you may want to think twice about picking up the salad kit. Here is a copycat recipe of the sweet kale salad, but with much healthier dressing ingredients and fresh chopped veggies. You will love this salad recipe not just for it’s taste, but also for the simplicity of making it yourself.
I try and sneak in kale into our family meals whenever I can, but sometimes I crave just a fresh, crispy and sweet salad. This salad includes a superfood winning combination of fresh ingredients, so here is what you will need:
Green Kale: The world’s best source of vitamin K.
Green Broccoli: Builds collagen.
Brussel Sprouts: Minerals and antioxidants.
Cranberries: The dried kind.
Pumpkin seeds: Very High in magnesium.
Cabbage Green: Improves digestion.
The Poppyseed Dressing Recipe has Just 4 Ingredients!
I love using this salad dressing for the salad. It’s a dressing that you will not find at any grocery store. It’s made with mayonnaise, sugar, apple cider vinegar, and poppy seeds. You will find that the dressing is sweet and tangy just like a poppyseed dressing should be.
Steps
Chop a small head of broccoli and add to a bowl.
Remove the stems and chop the kale leaves, then add to the broccoli.
Chop 1/4 of green cabbage, add to the bowl.
Slice Brussels sprouts, add to the bowl.
Add 1/2 cup of dried cranberries and 1/2 cup of pumpkin seeds to the bowl. Mix all together.

Ingredients
- 9 Brussels sprouts, shredded
- ¼ green cabbage, shredded
- 2 heads green broccoli, chopped
- 2 stems green kale, chopped
- ½ cup pumpkin seeds
- ½ cup dried cranberries
- 1 Tbsp cane sugar
- 1 Tbsp poppy seeds
- 1 cup mayonnaise
- 1 pinch salt
- 2½ Tbsp apple cider vinegar
Instructions
Chop a small head of broccoli and add to a bowl.
