Spring radish with cucumber and mint is another cold salad and refreshing sides you can enjoy on a warm spring day. This salad will help keep you hydrated!

Why should you eat radishes?

There are many reasons to eat radishes. Radish can help fight a cold, and clear a sinus infection. Radishes also help with digestion, prevent infections, eliminate toxins, they are low in calories and radishes keep you hydrated. Radishes also are a high vitamin C vegetable.

This simple but nutritional spring radish with cucumber and mint is great for spring or summer, especially since they are in season at this time. Cucumbers, high in fiber and antioxidants. They are good for hair health and hydrates skin.

Reasons to eat more mint include that it is good for oral health, promotes digestion and helps clear up congestion of nose, throat, and lungs. Enjoy this beneficial salad!

The ingredients in this salad can be homegrown in your own garden or backyard, if you have the opportunity. Homegrown radishes and cucumbers are so much better than store-bought, and you can taste the difference in every bite!

Radishes are the mian ingredient in this recipe, and are perfectly in season this spring!

Cucumbers are great for hydration and are high in fiber.

Green onion is high in vitmain K and vitamin C!

Mint refreshes even more in this refreshing salad! Mint boosts you rimmune system and helps with allergies & asthma.

  • poppy seeds
  • apple cider vinegar
  • salt
  • sugar

Steps

Wash and slice 1 bush of radishes and 1/4 of a cucumber.

Chop 1 stem fresh green onion and 1 stem fresh mint.

Poppyseed dressing: Stir together 1 tsp poppy seeds, 1 tsp apple cider vinegar, a pinch of salt, and a pinch of sugar. Let stand for three minutes before drizzling, combining with the vegetables.
