Snap Pea Red Cabbage and Mint Salad

If you’re looking for a ridiculously easy salad to make, you’ve found it. It’s one of my favorite summer salads, here’s why:

  • This salad comes together in under 10 minutes!
  • It is vibrant and refreshing! Full of bright colors from the snap peas and the red cabbage, this salad is very inviting. 
  • It’s so nutritious! Crunchy snap peas help promote healthy bones, a healthy immune system, and a healthy digestive system. Purple cabbage is low in calories but rich in fiber and vitamins A, C, K, and B6. 

What You Can Do With This Salad

When it’s a warm, sunny day out, I like taking a bowl of this snap pea, purple cabbage, and mint salad out to my porch and eating it as is. It’s crunchy, fresh, and oh so satisfying.

But this salad is pretty versatile. Here’s what else you can do:

  • Top your burgers with it. Seriously. This will elevate your favorite homemade burgers and turn them into gourmet burgers. 
  • Use as a side slaw with your battered fish. Toss in some homemade fries and you’ve got the perfect surf and turf meal – right in the comfort of your home.
  • Add into your tacos. Oh my goodness is it delicious!
  • Combine with any leftover meat you might have and make egg rolls with it!

What do I need to make this Snap Pea, Red Cabbage, and Mint Salad?

Snap peas are rich in vitamin K which supports bone function by helping your body to process calcium.

Red cabbage fills you with fiber and supports your digestive system.

Mint can help relieve indigestion and improves cold symptoms.

Garlic fills you with antioxidants that support your immune system.

Lemon juice promotes hydration and is rich in vitamin C.

Feta cheese gives your body vitamins A and K, as well as magnesium.

Along with those ingredients, you will need avocado oil, red wine vinegar, honey, salt, pepper, and goat cheese.

Add sliced snap peas, shredded cabbage, and sliced mint to a medium-sized bowl and toss well to combine.
