And every season, I love making these roasted carrots with sage carrots quite a few times. They make a great side dish for a quick weeknight dinner.

How to Roast Carrots with Sage

Step 1: Prepare equipment

  • Preheat the oven to 425F. Line the baking sheet with parchment paper.

2: Prepare the carrots 

  • Wash, dry, and trim off any long roots and long green tops from the carrots. Peel them and cut them into ½-inch thick sticks.

3: Combine ingredients

  • In a large bowl, combine melted ghee butter, maple syrup, sage, salt, and pepper.

4: Add carrots 

  • Add carrots and massage to infuse the flavors.

5: Place carrots on a baking sheet 

  • Spread in an even layer on a baking sheet.

6: Bake sweet carrots 

  •  Roast carrots for 15-20 minutes, or until carrots are soft, caramelized, and fork-tender. If needed, sprinkle with more salt for serving.

7: Serve and enjoy! 

  • Once done, remove from the oven, transfer to a serving dish or small saucepan, and serve warm. Enjoy!

How to store leftover roasted carrots

Roasted carrots can be stored in an airtight container in the refrigerator for 3 to 4 days. They do not freeze well.

Expert Tips 

  • Thicker carrots should be cut diagonally to get the best flavor. Plus, they plate beautifully this way. You’ll get that earthy sage flavor instead of burnt, bitter herbs.
  • Very small, thin carrots or baby carrots can be left whole or cut in two. 
  • Lining the baking sheet with parchment paper will prevent the carrots from sticking to the pan and also keep the caramelized sugar from burning. 
  • Pay careful attention when you roast carrots. They should be tender and roasted but not burned so shake or turn the carrots halfway if you need to.
  • If you’re looking to take these roasted carrots up a notch, add a pinch of salt after you roast the carrots with sage.
