As soon as the summer season comes to an end, we see our supermarkets fully stocked with pumpkins and squash. But did you know carrots are also a fall vegetable? That’s right. Although they’re usually available year-round, they peak in the fall. And every season, I love making these roasted sage carrots quite a few times. I can’t get enough of them!
Tips And Tricks For Easy Roasted Sage Carrots
This side dish is really easy to make. But there are a few things you can do (and avoid) to make sure they’re the best-roasted carrots!
Cut your carrots diagonally. Hear me out. Cutting them diagonally gets you the best flavor. Plus, they plate beautifully this way!
You’ll get that earthy sage flavor instead of burnt, bitter herbs.
If you’re looking to take these roasted carrots up a notch, add a pinch of salt after you roast the carrots with sage. Roasted carrots are so delicious on their own, that is why I don’t add so many extra ingredients. But combine them with sage and you get a sweet surprise!

How to make these Roasted Carrots
Steps
Preheat the oven to 425F. Line baking sheet with parchment paper.
Wash and peel the carrot. Cut into ½ inch thick sticks. Very small carrots can be left whole or cut in two.
In a large bowl, combine melted ghee butter, maple syrup, sage, salt and pepper.
Add carrots and massage to infuse the flavours.
Spread in a single layer on a baking sheet. Bake for 20 minutes, or until carrots are soft and caramelized.
If needed, sprinkle with more salt for serving.

- 1 Tbsp maple syrup
- 3 large fresh sage leaves, finely chopped
- ⅓ tsp salt
- black pepper, to taste
