Steps

Cook quinoa by adding quinoa and water into a small pot. Bring to a boil, lower the heat to low and cover. Cook for 15 minutes or until water is gone. Fluff with a fork and let it cool down.

Add the rest of the ingredients to the quinoa.

Add salt and pepper to taste.

  • 14 oz can garbanzo beans, drained & rinsed
  • 1 orange bell pepper, chopped
  • ¼ cup Italian parsley, chopped
  • ¼ red onion, chopped
  • 1 small avocado, peeled & chopped
  • ½ Tbsp red wine vinegar
  • 1 Tbsp olive oil
  • ½ Tbsp lemon juice
  • salt, to taste
  • ground black pepper, to taste
