My family loves a good soup and in the winter we regularly make the best chicken noodle soup recipe (with potatoes!), so it doesn’t surprise me that we love the chunkiness of this fresh spring and summer soup. However, feel free to blend this recipe once it cools to create a thick and creamy soup instead.

How to Make a Vegetarian Asparagus Soup 

Step 1: Cook Carrots

Begin by heating ghee in a large soup pot over medium heat. Then, add sliced carrots, chopped onion, and minced garlic. Cook, while stirring a few times, for 5 minutes.

Step 2: Add Potatoes and Broth

Add the chopped potatoes and broth to the pot. Bring the soup to a boil and cook until the potatoes are tender. This should take about 10 to 15 minutes.

Step 3: Trim Asparagus

Trim the asparagus and cut it into bite-sized pieces. Leave the tops whole though.

Step 4: Add Asparagus and Peas

Once the potatoes are cooked, add the chopped asparagus stalks and green peas to the pot. You can also add a handful of chopped carrot greens if you’d like. Simmer the pot for 3 minutes.

Step 5: Add Cream

Add cream and bring the soup to a boil one more time. As soon as the soup bubbles, turn off the heat.

Add salt and pepper to taste. Enjoy!

  • 200 grams asparagus
  • cups baby potatoes, chopped
  • 4 young carrots, sliced (1½ cups)
  • 1 handful carrot greens, optional
  • 1 cup green peas, fresh or frozen
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1 Tbsp ghee, butter, or olive oil
  • 6 cups broth, chicken or vegetable
  • ½ cup heavy cream
  • salt and black pepper, to taste

    I’ve had asparagus soup only once in my life before at an old neighbor’s. This brought back all the memories. Thank you

  2. Been wanting some asparagus chowder awhile, but I also wanted carrots, potatoes, etc. Found this recipe and prepped my veggies, then started putting together. Only thing I changed was using corn instead of green peas. This was by far one of the best chowders I’ve had in a LONG time, and I love not blending everything up but being able to get bites of all those fresh veggies. Thanks so much for a killer recipe.
