This salad combines basil, mozzarella, tomatoes, then adds avocados and cucumbers for a fresh, clean-eating take on Caprese Salad! It’s filled with refreshing veggies and drizzled in a balsamic vinaigrette.

Clean Eating Avocado Caprese Salad

As we all know, the classic Caprese salads contain basil, tomatoes, and mozzarella perfectly sliced and aligned on a plate. In my opinion, even the classics could use a bit of improvement, because change couldn’t hurt. My version: added avocado, cucumber, and a great balsamic dressing!

The added ingredients also add amazing benefits! Cucumber hydrates your body while avocado provides necessary potassium. Also, most of these ingredients are ones that usually are on-hand already.

I hope you’ll love this Caprese salad as much as I do! It’s simple to make and you will love the refreshing taste this recipe has. This healthy clean eating recipe is great as a snack for any time of the day. It’s filled with vitamins and packed with nutrition. Besides that, the basil is rich in beta-carotene and antioxidants, while the tomato contains many heart health benefits.

Here’s what you’ll need to make this Caprese Salad:

Tomatoes are rich in lycopene, supporting heart health and helping to prevent sun damage to your skin.

Avocado fills you with potassium and healthy fats.

Cucumber is hydrating and gives your body antioxidants.

Basil is rich in beta-carotene, which supports eye health.

Mozzarella is filled with calcium and zinc, as well as phosphorus.

Along with those ingredients, you will need balsamic vinegar, lemon, extra virgin olive oil, salt, and black pepper for the dressing.

Steps

Cut 6 oz fresh mozzarella, 1 large tomato, and 1/2 English cucumber into bite size cubes.

Chop a small handful of basil and arrange with cut ingredients.

Balsamic vinaigrette: Whisk together 2 Tablespoons extra-virgin olive oil, 1 Tablespoon balsamic vinegar, juice from 1/2 a lemon, and a pinch of salt and pepper. Drizzle on salad.
