Do you ever feel like you can’t wait for a certain season just to eat the fresh produce it brings? That’s me every year with summer. I just can’t wait to enjoy watermelon, all kinds of berries, apricots, corn, zucchini, and of course, cherries! This sweet treat is the perfect fruit to make a salad with because when you add veggies, the flavors balance perfectly and you get all of the delicious and nutritious combinations your body craves.

Summer can bring many beautiful and juicy fruits. Every year, delicious cherries are some of the first summer treats. Therefore, they are the first to be packed with benefits! Did you know that the riper the cherry, the better it is? So, cherries naturally darken while they ripen. During this time, they produce antioxidants. Also, sweet cherries are loaded with potassium.

As you know, cherries naturally reduce blood pressure. Surprisingly, one cup of cherries can pack in about the same amount of potassium as a small banana! Naturally, cherries are rich in beta carotene and vitamin C. Also, they have anthocyanins and quercetin. These antioxidants work together to fight cancer. Unfortunately, cherries are seasonal only around the beginning of summer. So, enjoy them while you can in this yummy recipe!

What do I need to make this recipe?

Cherries are filled with goodness like antioxidants and vitamin C. They help improve sleep quality!

Pecans are rich in protein and healthy fats. You can get protein from nuts, too!

Blueberries help to reduce DNA damage and are rich in antioxidants.

Avocadoes are filled with heart-healthy fats and potassium.

Feta cheese is rich in calcium, supporting bone health, and phosphorus, supporting nerve health.

Spinach is the perfect base for this salad, improving eye health and helping to prevent heart disease.

  • Dijon mustard
  • red wine vinegar
  • honey
  • salt

Steps

In a blender, combine dressing ingredients. Mix until smooth. Add salt to taste.

Add salad ingredients into a large bowl. Drizzle with cherry dressing.

  • 1 tsp Dijon mustard
