One Pot Easy Braised Beef with Potato and Vegetables
This Braised Beef with Mushrooms is a hearty, healthy, delicious dish that’s perfect for winter. It’s a recipe you’ll want to get cozy with, over and over.
Now that it’s getting cold outside, I’m starting to crave recipes that are cozy, warm, and soothing for the soul. The recipes that are pure comfort.
This Braised Beef recipe with mushrooms is just that. And you’ll know exactly what I’m talking about when you take the first bite.
What All Goes Into Braised Beef With Mushrooms
It starts with 2 pounds of beef. You can use any cut but I prefer chuck. You’ll cut it into bite-sized pieces and lightly fry in olive oil for 3-4 minutes.
Veggies. Onions, carrots, and garlic come together in the skillet and are then sprinkled over the beef.
Potatoes. Cut like french fries. You’ll fry them and also add to the beef and veggies.
Dill. Or parsley. For a refreshing taste.
Mushrooms. These will also be fried for 2-3 minutes before incorporating with the rest of the ingredients.
Broth. Or water if you’d like to substitute. You need liquid so everything simmers and cooks to perfection. The broth is my choice because it adds an additional depth of flavor.
Grated cheese and mayo. This is your last layer. This makes everything creamy.
Everything is then baked. And once this dish sits in the oven for a few minutes, the aroma will hit your nose so pleasantly.
Important tip: You’ll notice that everything is cooked/fried separately before adding it into the dish. This is to ensure that each ingredient brings its own unique flavor. Simmering or frying all the ingredients all at once will result in one flavor.
How to make this Easy Braised Beef Dish
Steps
Rinse and dry 2 pounds of beef and cut into small cubes. Heat 2 Tablespoons of olive oil in a large skillet and fry your meat on high heat for 3-4 minutes or until slightly browned.
Transfer the beef into an oven safe dish, then sprinkle with salt and pepper.
In the same skillet, fry 1 diced onion and 3 grated carrots, then transfer into the dish with fried beef. Sprinkle with minced garlic.
Cut 6 medium sized potatoes into long strips, like you would cut potatoes for French fries, place into the skillet, add more oil if needed.
Fry on high heat for 2-3 minutes until slightly browned. Transfer into the dish with beef and vegetables. Add a cup of chopped dill or parsley.
Wash, dry and slice 10 medium-sized mushrooms. Fry on high heat for 2-3 minutes, then place them into your baking dish. Sprinkle with salt and pepper.
Pour in 3 cups of broth, which you can easily substitute with water if you like.
Last thing you need to do is add a cup of grated mozzarella or pepper jack cheese and cover with a thin layer of mayonnaise.
Cover the dish and bake at 390 degrees F for 30 minutes. Then uncover and bake for 10-15 more minutes. Take out of the oven and let stand for 10 minutes.
Garnish each plate with fresh parsley when serving. You can gently mix it before serving to make sure everyone gets equal amount of each ingredient, but you don’t have to.
