My idea of a successful weeknight meal is one that gets ready in time. And that’s not always possible. But this beef and vegetable soup comes together in an hour in just one pot.

So not only do I have dinner ready in time, I’ve got a dinner that is absolutely delicious – my entire family licks their bowl clean. It’s got juicy, tender pieces of beef and hearty vegetables in a smooth, flavorful broth. It’s a super satisfying meal, especially when you’re short on time. The best part? It tastes like it’s been simmering on the stove for hours.

It’s easy on the pockets. Now the Filet Mignon might be the only $$ ingredient on your grocery list. You could go with other cuts of meat but I would highly recommend using Filet Mignon. It has the perfect texture for this soup. It’s tender, juicy, and cooks faster than most other beef options. Every other humble ingredient is fairly inexpensive. Most of the items you might already have in your pantry.

It delivers that slow-simmered taste without the wait. A bite of this hearty soup will taste like you’ve been working in the kitchen all day making it. But it truly does come together in about an hour.

Perfect for those busy weeknights. Those darn weeknights sometimes get the best of me. The last thing I want to worry about is the dishes piling up before we even start dinner. I love that this soup is made all in one pot.

Meat is high in protein
Like all meat, filet mignon is high in protein. You don’t have to get your protein from meat, but without enough protein, your body begins to break down tissues. I don’t eat much beef, just because I don’t like the texture of it, unless it’s filet mignon.I find that it is very tender, juicy, and cooks faster than most other beef options. This beef and vegetable soup is a great option for dinner especially when you have errands to run and chores to complete. It doesn’t take much time to add all the ingredients into one pot.

What do I need to make this recipe?

Filet mignon is very low in calories and high in protein and B vitamins.

Yukon potatoes are rich in fiber and magnesium.

Carrots contain vitamin A and vitamin K.

Yellow onion supports digestion and is rich in vitamin C.

Fresh dill is rich in magnesium, which fights depression.

Along with those ingredients, you’ll need olive oil, salt, black pepper, tomato paste, and water

Steps

Heat up olive oil in a pot.

Add beef and a teaspoon of salt and pepper. Sauté for 10 minutes, stirring occasionally.

Add 1/2 onion, sauté for another 5 minutes.

Add potatoes and carrots. Continue sautéing for 5 minutes.

Stir in 2 Tablespoons of tomato paste, then add 6 cups water.

Turn heat down to the lowest, then add salt to taste.

Cook for one hour.

Stir in 1 Tablespoon fresh dill.

Ingredients

  • 2 Tbsp olive oil
  • 1½ lbs filet mignon, cut into 1-inch cubes
  • 1 tsp salt, plus more to taste
  • 1 tsp ground black pepper
  • ½ yellow onion, diced
  • 4 Yukon potatoes, peeled & cubed
  • 1 medium carrot, thinly sliced
  • 2 Tbsp tomato paste
  • 6 cups water
  • 1 Tbsp fresh dill, chopped
