I haven’t really explored much with sweet potatoes, but thought it’s time to play around with it. My kids suggested making potato chips, so it’s what I did. And I got to say, it was a hit with the kids.

Steps
Preheat oven to 400F.
Peel and slice 2 sweet potatoes.
Toss potato slices with 1 Tablespoon extra-virgin olive oil and 1 teaspoon salt.
Arrange potato slices on a baking sheet, spacing them 1/4 inch apart. Bake for 30 minutes, flipping slices over halfway through. Sweet potato slices should be crisp and golden brown.
