A great way to use up your apples is by combining them into a salad. Creamy Apple and Celery Salad with Cranberries make a great mid-day snack.

Well, September flew by me very quickly this year. It seems like just yesterday I sent my kids off to school, but it turns out that they have been there almost a whole month now. Where does the time go? Seriously. Can you believe that Christmas is in less than three months, like wow! I am still wearing my flip flops. ( I guess it’s time to re-organize my closet)

Well whether you are ready or not for fall, it’s here. The rain, knit blankets, thick sweaters, cozy fireplaces, and apple recipes. This apple salad with celery is a great snack to use up your apples. I have been planning to make it for a few weeks now, and finally got around to it.

ARE APPLES GOOD FOR YOU?

The saying goes that ‘an apple a day keeps the doctor away’ but how? What kind of health benefits do apples contain? This high fiber fruit is a miracle detoxifier for your body! Apples help memory, so one a day is a good idea. Besides that, apples contain nutrients like vitamin C that hydrate and benefit healthy skin! But apples are not the only nutritious ingredient in this salad. Celery is filled with fiber and cranberries contain proanthocyanidins which prevent a number of diseases.

What do I need to make this recipe?

Apple contains pectin, which is a form of fiber. It has prebiotic benefits, supporting your gut.

Celery is filled with fiber, supporting digestion.

Walnuts fill you with omega-3s and promote gut health.

Dried cranberries give your body vitamin C, which supports collagen formation and supports the immune system.

Greek yogurt contains calcium, which can help bone health.

Lemon juice  is hydrating and supports your skin health.

Steps

Peel, core, and chop 1 apple.

Chop 2 celery stalks and 1/8 cup walnuts.

Mix chopped ingredients with 1 1/2 Tablespoon dried cranberries, 2 tablespoons organic plain Greek yogurt, and 1 teaspoon lemon juice. Enjoy!
