You can make a cauliflower puree, roast it, or eat it raw like this salad. This salad comes with heart health (benefits of tomatoes!) and an abundance of vitamin C.

Ingredients

  • 1 head cauliflower, chopped thily
  • 10 tomatoes, sliced in half
  • 1 green onion, chopped
  • 1 stem fresh dill, chopped
  • 1 clove garlic, minced
  • 1 Tbsp mayonnaise
  • 1 pinch salt

Instructions

  • Combine all ingredients into a bowl then add salt to taste. Enjoy fresh.
