Pineapple Cucumber Red Pepper Salsa


It’s hard to beat the refreshing taste of pineapple and cucumber salsa on a hot summer day. This salsa also has crunchy red peppers for a sweet, peppery flavor. All you need are some tortilla chips!

Sweet, fruity salsa.

Yup, I said it. And I might be crossing some boundaries here, but this stuff is ah-mazing. Seriously, throw out the idea that salsa has to be spicy and savory. Salsa can be anything you want it to be. And on this beautiful sunny day in June, I wanted my salsa to be cold, sweet, and fruity – just like the drink in my hand: this creamy, vanilla and blackberry pie smoothie. Yup, it is as good as it sounds.

Okay, back to the salsa.

The main ingredient? Pineapple. Oh yeah. It’s juicy, tangy, and sweet. And it pairs so well with the other, just as important ingredients. The cucumber here is mild in flavor but bold in texture. It adds an element of refreshing that is so loved in this recipe. Red peppers add a totally different kind of sweetness here. They also add a beautiful color to the salsa – which is always photo-ready for any of your summer soirees. 

So what’s left?

Red onions, minced garlic, lime, cilantro, and salt.

  • 2 cups pineapple, chopped
  • 1 cup red pepper, chopped
  • 1 cup English cucumber, chopped
  • ½ cup cilantro, chopped
  • ¼ cup red onion, chopped
  • 1 clove garlic
  • 1 lime
  • ½ tsp salt

Instructions

  • Add pineapple, red pepper, cucumber, cilantro, red onion, and garlic to a medium-sized bowl.

    This is such a fresh dip! We’ve had it with chips and have also topped off our rice and chicken bowls with this. So good!
