Simple Roasted Orange Cauliflower with Cheese and Garlic

Do you ever crave food based on the weather outside? I’m not talking about ice cream in the summer. I’m talking about something more specific. Like craving beef stew in the snow. Crispy potato fritters when it’s foggy outside. Nope? Just me?
It was raining outside the other day. And it’s been pretty chilly here in the Northwest lately. And I was looking to munch on something crispy. And cheesy. And flavorful.
Roasted cauliflower. With parmesan. And lots of garlic-y flavor.
I had orange cauliflower in the fridge since it’s in season and knew right away that’s what I wanted to use.
Orange cauliflower is like any other cauliflower in all aspects but its color. Orange cauliflower is, well, orange. The hue comes from the extra beta-carotene naturally stored in its florets. This gives the orange cauliflower 25% more vitamin A than your ordinary cauliflower.
This dish is really easy to make. All you have to do is add your cauliflower florets to an oven-safe baking dish, add all your ingredients (except the parsley and green onions – save these for the end), and roast for 20 minutes. You get deliciously crispy, cheesy cauliflower full of delicious garlic lemon flavor.
I love making this right before the kids come home from school. They always want a snack as soon as they step into the door and if there’s nothing out, they’ll try to reach for a not-so-healthy snack. Putting a plate of orange cauliflower with cheese and garlic means they’re getting in some extra nutrition before dinner.
What do I need to make this recipe?
Orange cauliflower fills you with vitamin A, which boosts your immune system.

Parmesan cheese has no carbs, but does fill you with protein and healthy fats.
Fresh parsley and green onion both contain vitamin K, which supports bone strength.
Along with those ingredients, you will need lemon juice, salt, and extra virgin olive oil.

Simple Roasted Orange Cauliflower with Cheese and Garlic
Equipment
- Oven safe dish
- garlic press
- Lemon squeezer
Ingredients
- 1 head orange cauliflower, chopped into florets
- 2 cloves garlic, minced
- 1 Tbsp extra virgin olive oil
- 1 pinch salt
- ½ lemon, juiced
- ¼ cup parmesan, shredded
- ½ Tbsp fresh parsley, chopped
- ½ Tbsp green onion, chopped
Instructions
- Preheat oven to 500F.
- Place cauliflower florets into a baking dish.
- Add 2 minced garlic cloves, 1 Tablespoon extra-virgin olive oil, a pinch of salt, and juice from 1/2 a lemon
- Sprinkle 1/4 cup shredded parmesan on top.
- Roast cauliflower for 20 minutes.
- Sprinkle with 1/2 Tablespoon chopped fresh parsley and green onion.
