It comes together quickly, and easily. 2 minutes of prep work. That’s it. The refrigerator will do the rest of the work.

You only need 4 other ingredients. Spices and herbs that you probably already have at home.

Versatility. Eat them as-is if you’d like. They’re delicious. Put them in a salad. Or combine them with mozzarella balls for a fun, easy appetizer.

Is the sugar really necessary?

Yes. Don’t omit it. If you’re worried your tomatoes will taste less like vegetables and more like a dessert, don’t. The sugar just helps nicely balance everything out. Especially between the salt, dill, and garlic.

What kind of tomatoes can you use?

This recipe is intended for cherry tomatoes. Perhaps you could marinate your heirlooms, romas, and beefsteaks with this recipe. Chop them up and add them to your salads. But from experience, this recipe works best with cherry tomatoes.

How long should you marinate the tomatoes?

These tomatoes need a minimum of three hours in the fridge. The longer you let them sit, the more flavor you’ll get. If you make these 24 hours in advance, that’s perfect!

These marinated tomatoes come together quite quickly, and they can totally be made ahead of time. Eat them as a snack, in a salad, or as aside. They’re delicious any which way!

Ingredients

  • 2 lb cherry tomatoes
  • 1 Tbsp salt
  • 1 Tbsp sugar
  • 4 cloves garlic, minced
  • 1 handful fresh dill, chopped

Instructions

  • Remove the vine of the tomatoes, if they have it. Wash and put into a medium sized bowl.
    2 lb cherry tomatoes
  • Add in the sugar.
    1 Tbsp sugar
  • Add the salt (I use sea salt.)
    1 Tbsp salt
  • Mince garlic cloves and add to the tomatoes.
    4 cloves garlic,
  • Chop a handful of fresh dill and add.
    1 handful fresh dill,
  • Mix all together.
  • Cover with plastic wrap and refrigerate for at least 3 hours, (24 hours will give it more flavor).
