Easy Beet Salad with Garlic

I’m so happy the warmer days are here! To celebrate, here’s a Marinated Beet Salad! Eating salads daily is an easy and healthy habit to adopt because they are packed with health benefits.

If you know, you know: beets make the most delicious salads! My family’s favorite salads are all made with beets. They are super easy to cook and combine with a range of flavors, like this salad with garlic and grape seed oil.
Did you know that the whole entire beet plant is edible, from the greens all the way to the roots? Beet greens make amazing salads like this one. Also, beets contain betalin, which detoxifies the body and gives beets their bright color.
Winter is the best time to enjoy beets. They are well known to be put into soups like borscht and are so comforting to eat! Garlic is the best way to spice up any dish and get the benefits of antioxidants, stronger bones, and vitamins B and C.
Note: I use this Kuhn Rikon Julienne Mandoline) for shredding the beets in this salad. But I also use it for other vegetables, it makes a great presentation and easy to eat.

Along with those ingredients, you will need cane sugar, salt, black pepper, coriander, and white vinegar.

Easy Beet Salad with Garlic
Equipment
- grater
- salad bowl
- garlic press
Ingredients
- 3 large red beets, grated
- 3 Tbsp cane sugar
- 1 tsp salt
- 1 tsp ground black pepper
- 1 tsp ground coriander
- 5 Tbsp white vinegar
- 10 cloves garlic, minced
- ½ cup grapeseed oil
Instructions
- Grate 3 large beets. (You can use this Kuhn Rikon Julienne Mandoline).
- To beets add 3 Tablespoons cane sugar, 1 teaspoon salt, 1 teaspoon ground black pepper, 1 teaspoon ground coriander, and 5 Tablespoons white vinegar. Mix well.
- In the center of the beets add 10 minced garlic cloves.
- On a stove top over medium heat, begin to heat up 1/2 cup of grape seed oil. Remove from heat as soon as you start seeing a little bit of steam.
- Pour the heated oil on the garlic. It will sizzle and give a garlicky, smokey smell. Quickly mix the salad. Enjoy!
