Ingredients

  • 3 cups melon, cubed
  • 2 cups cucumber, sliced
  • 2 cups cherry tomatoes, sliced in half
  • 3 Tbsp extra virgin olive oil
  • 3 Tbsp red wine vinegar
  • ¼ tsp sea salt, more to taste
  • 1 dash black pepper
  • ¼ cup fresh basil, chopped
  • ¼ cup fresh mint, chopped

Instructions

  • Add melon, cucumber, and cherry tomatoes to a bowl.
  • Drizzle oil, vinegar, salt, and pepper on top then toss well to combine.
  • Add basil and mint, then toss again to incorporate.
  • Adjust dressing ingredients to taste.
