This version of a cucumber and tomato salad is added a sweet kick of melon, fresh basil, and fresh mint. Then, it’s combined together with a simple salt-and-pepper vinaigrette whisked together with olive oil and red wine vinegar.

Melon is rich in fiber, vitamin K, and copper. Copper is important for the body to form red blood cells.

Cucumber hydrates and fills you with antioxidants, supporting bone health.

Cherry tomatoes are rich in lycopene, which benefits heart health and supports skin health.

Along with those ingredients, you will need extra virgin olive oil, red wine vinegar, sea salt, and black pepper. These ingredients are for the dressing, so they’re adjustable to taste.

  • 2 cups cucumber, sliced
  • 2 cups cherry tomatoes, sliced in half
  • 3 Tbsp extra virgin olive oil
  • 3 Tbsp red wine vinegar
  • ¼ tsp sea salt, more to taste
  • 1 dash black pepper
  • ¼ cup fresh basil, chopped
  • ¼ cup fresh mint, chopped

Instructions

  • Add melon, cucumber, and cherry tomatoes to a bowl.
  • Drizzle oil, vinegar, salt, and pepper on top then toss well to combine.
  • Add basil and mint, then toss again to incorporate.
