Ingredients
- 3 cups melon, cubed
- 2 cups cucumber, sliced
- 2 cups cherry tomatoes, sliced in half
- 3 Tbsp extra virgin olive oil
- 3 Tbsp red wine vinegar
- ¼ tsp sea salt, more to taste
- 1 dash black pepper
- ¼ cup fresh basil, chopped
- ¼ cup fresh mint, chopped
Instructions
- Add melon, cucumber, and cherry tomatoes to a bowl.
- Drizzle oil, vinegar, salt, and pepper on top then toss well to combine.
- Add basil and mint, then toss again to incorporate.
- Adjust dressing ingredients to taste.
