Emerald Green Cucumber Mint Smoothie

When you ask people what their favorite summer drink is, I’m sure mojito comes up a lot. So I decided to take the favorite mojito up a notch. The best part? It’s nonalcoholic – so the whole family can enjoy!
This Emerald Green Cucumber Mint Smoothie Is:
Easy to make. Just toss your ingredients into your favorite blender and serve.
Chock full of nutrients. The main ingredients of this smoothie are pineapple, banana, and cucumber. Pineapple is a great source of vitamin C. Though bananas are known for the amount of potassium they have, they’re richer in Vitamin B6. Cucumbers are low in calories but high in Vitamin K.
Hydrating. Both pineapple and cucumber have lots of water. In fact, cucumbers are made up of about 96% water! That’s what makes this smoothie so hydrating!
So What Gives This Cucumber Mint Smoothie Its Bright Emerald Green Color?
Although the mint, parsley, and cucumber add a good amount of green color, the finish of the smoothie still won’t be that bright emerald color.
To add more oomph to the color, I added spirulina. You could also add in your favorite greens powder – which will add a beautiful green color in addition to other nutrients.
What Is Spirulina?
Spirulina is a type of algae that contains a lot of nutrients including B vitamins, beta-carotene, and Vitamin E. Spirulina also has lots of antioxidants. A wonderful way to consume it and take advantage of its nutritional benefits is by adding it to your favorite smoothies!

Emerald Green Cucumber Mint Smoothie
Equipment
- blender
- cups
- metal straws
Ingredients
- 1½ cups frozen pineapple
- 1 large banana, frozen or fresh
- 1 cup cucumber, chopped
- 2 cups unsweetened macadamia nut milk, or any other alternative milk of choice
- 1 small handful fresh mint
- 1 small handful fresh parsley, (Italian or curly)
- zest of 1 small lemon
- 1 Tbsp greens powder, or spirulina
Instructions
- Add all ingredients to a blender and blend until smooth.
