Zucchini vs. Potato

Back in the day, when I was much younger, my mom made sautéed potatoes with onions. I loved it. Once in a while, I crave it. Today was one of those days, but potatoes have a lot of starch and I try to stay far away from them. So I thought- why not substitute it with zucchini?? Here it is! Healthier, Easy and so Delicious! (Potatoes are forgotten!) In addition, this recipe is also veganvegetarian, sugar-free, dairy-free and gluten-free.
