Brighten up your day and enjoy the last days of summer with an Easy, Dairy-free, & Creamy Dragonfruit Smoothie. It’s nutritional and delicious to enjoy for breakfast, snack, or even as a dessert.

Summer smoothies are a great way to cool off in the heat or start your day with. They fill you up and keep you hydrated, too! It’s great to enjoy fresh fruits combined with coconut flavors and that perfect touch of lime!
While it might not quite be a superfood, iron, fiber, and vitamin C are the most known nutrients in dragonfruit. It’s a low-calorie fruit with lots of colors. The fruit comes in four varieties of colors. Three of the fruits come pink-skinned, but with different color flesh- red, purple, and white flesh. The fourth one comes in yellow skin with white flesh.
Dragonfruit only blooms once a year, and comes to our grocery stores from July-October. If you can’t find fresh dragonfruit, grab a bag of frozen for a tasty dragonfruit smoothie. It’s a great treat!

Ingredients
- 2 cups dragonfruit, frozen
- 1 cup pineapple, frozen
- 1 banana, fresh
- 2 cups coconut water, or orange juice
- 2 cups coconut milk, or dairy-free, regular milk
- 1 lime, juiced
- 1 pinch salt
- 1 handful fresh mint, leaves
Instructions

Blend until smooth. If the mixture is too thick, add some more milk or water. If it’s too thin, add some fruit.
