Coleslaw is the ultimate summer salad. Move aside, fruit salads. Coleslaw takes the cake on this one. It’s so commonly known as the most popular side dish to fried chicken, mac & cheese, and mashed potatoes. A big round of applause to coleslaw for being the healthiest and green option in that classic collective!
Easy to make and easy to eat, coleslaw is wildly popular with my kids. Since this recipe is dairy-free, I had a great time eating it too. While honey might be a funny ingredient to see in a coleslaw recipe, it actually is a great option since coleslaw is generally made with sugar.
There is a good amount of healthy benefits in coleslaw, especially when there is no sugar involved. Most coleslaw recipes I found had sugar in it, but I am cutting down my sugar intake as much as I can, may be able to even eliminate it from my life completely. There are other healthier alternatives to satisfy a sweet tooth – for example, honey or maple syrup. I played around with ingredients and came up with this simple coleslaw recipe that still gives the sweet and tangy taste. The mayonnaise comes in a dairy-free option if you want.

Ingredients
- 1 head green cabbage, shredded
- 2 carrots, grated
- 1 cup mayonnaise, avocado mayonnaise - if you want it dairy free
- 3 Tbsp apple cider vinegar
- 3 Tbsp honey
- 1 small pinch salt
- fresh dill, optional
