This Avocado Toast recipe idea is inspired from my weekend trip to Beverly Hills, California. For me, the perfect start of a day is in this recipe. Of course, it consists of a fresh slice of bread and avocado topped with a drizzle of oil. Then, it’s finished off with feta cheese and microgreens. As you may know, avocado contains a high content of fat. Therefore, it’s good for you, and contains loads of health benefits. Personally, a rule of thumb I keep is to enjoy just half of an avocado a day. Feta cheese is low in both calories and fats. Microgreens might be small in size, but don’t be deterred! Naturally, they are packed with vitamins.
How can I enjoy this delicious toast? Easy: for breafkast, lunch, or dinner! As you know, toasts are more popular as a breakfast food. Despite this, avocado toast can even be enjoyed as a light lunch or dinner. With this recipe, you can taste and enjoy the buttery consistency of avocado being perfectly complemented with crumbly, salty feta and smooth olive oil. Microgreens are the perfect fresh topping!
Easy Avocado Toast with Feta Cheese and Microgreens
- cutting board
- Bread knife
- 1 slice toast
- ½ avocado, mashed with a fork
- 1 tsp extra virgin olive oil
- 1 tsp feta cheese, crumbled
- 1 tsp microgreens
- Spread mashed avocado on toast.
- Drizzle extra virgin olive oil on avocado.
- Add crumbled feta cheese and micro-greens on top and enjoy!
