Simple Cauliflower Salad with Mayonnaise

It has been a while since I posted a new salad recipe, but finally I am settled in and can continue on eating and sharing salads and soups. I invited my family over to our new place, and my older sister brought this cauliflower salad. It is filled with bright and nutritional benefits. For example, the scallions are high in calcium. The bell peppers are rich in vitamin C and the cauliflower is packed with potassium.

Cauliflower is not a veggie that we might regularly eat raw, but there’s no reason not to, and anyways, we might not enjoy the smell of cooked cauliflower in our homes. Either way, it’s a great veggie to incorporate into our meals, since it’s so versatile. Enjoying riced cauliflower is a great way to cook it, add many different flavors, and enjoy it’s benefits without having that cauliflower-cooking smell.  It combines well with many different flavors, and is always the first go-to carb-free replacement for lots of dishes. Don’t sleep on this great vegetable!

Bell peppers and corn liven up this salad with the color and the falvors. While other bell peppers can be used, I recommend the orange one. It’s a nice and sweet pepper, but perfectly balances the cauliflower and corn. I hope you enjoy this recipe! It makes a great salad with a summery grilled main dish.

What do I need to make this recipe?

Cauliflower is high in fiber and B vitamins.

Orange bell pepper is rich in vitamins A and C, as well as potassium.

Scallion gives your body vitamin K and vitamin B2.

Corn fills you with manganese and copper, as well as iron.

Dill is rich in vitamin C and magnesium.

English cucumber helps to lower blood sugar and has antioxidants.

Along with those ingredients, you will need mayonnaise, salt, and pepper.
