Brown Rice and Garbanzo Bean Salad


This salad is vegetarian, nutritious and an amazing way to enjoy brown rice. Brown rice combined with garbanzo beans, celery, carrots and basil with a light dressing combine to make this delicious salad!

Surprise! I bet you’ve never tried a rice salad! Rice is typically a side dish, sometimes a main dish. But a salad? This is unique! To do it well, we have to do it right. That’s why I added garbanzo beans, carrots, parsley, basil, and celery!

Brown rice is the ultimate choice when making a rice salad. It is full of flavor and benefits, while white rice provides little nutritional content. Brown rice fills you with fiber and magnesium.

Garbanzo beans (also known as chickpeas) are rich in protein, helping you to feel full and have a low glycemic index. This helps so that your blood sugar doesn’t go up too fast.

All right, let’s put this salad together! You will need:

Basmati brown rice fills you with magnesium, which supports heart health. Also, it is rich in antioxidants.

Garbanzo beans can help to lower cholesterol and are good for your bones.

Carrots are rich in beta-carotene and vitamin A, supporting eye health.

Celery fills you with vitamin C and vitamin K, supporting your immune system and helping your blood to clot.

Italian parsley can help to reduce bloating and supports bone health.

Fresh basil has antioxidants that can help fight free radicals. Also, they can help to reduce high blood sugar.

Garlic supports your immune system and is antibacterial.

Scallions are rich in fiber and lower the risk of heart diseases.

Along with those ingredients, you will need olive oil, lemon juice, salt, and pepper.

Ingredients

  • 4 cups basmati brown rice, cooked
  • 2 cups garbanzo beans, cooked
  • 1 small carrot, grated
  • 1 stalk celery, diced
  • ¼ cup Italian parsley, chopped
  • ¼ cup fresh basil, chopped
  • 3 Tbsp olive oil
  • 3 Tbsp lemon juice, freshly squeezed
  • 1 clove garlic, minced, optional
  • ½ tsp salt
  • 1 dash black pepper
  • 2 stem scallions, thinly sliced, white and green parts

Instructions

  • Add rice, garbanzo beans, carrots, celery, parsley, and basil to a large salad bowl.
  • Toss all ingredients well to combine.
  • Whisk together olive oil, lemon juice, garlic, salt, and pepper.
  • Drizzle dressing over salad ingredients and toss well to coat.
  • Serve topped with sliced green onions, a squeeze of lemon, and extra chopped fresh herbs if desired.
