Remember when broccoli tots were all the rage? I remember thinking, “this is pure genius.” An absolutely fun (and yummy) way to get the kids to eat broccoli. And adults.

But then the food world went one step further and the broccoli gods introduced us to broccoli fritters. And if you’ve never had them, you are missing out. Especially with this perfected recipe. These fritters are crispy, nutritious, and so darn good!

Seriously, I am fan-girling over broccoli right now because of this recipe.

And pair them with a simple, two-ingredient honey mustard sauce? Oh, I think I helped you find your new obsession. Mmm.

Yes to more veggies

Broccoli might not get your family excited. But call them fritters? Now that’s something to look forward to. Fritters are a wonderful way to fit more vegetables into your family’s diet. It’s also a great way to use up some of those extra vegetables you have at home. And the best part is that you can use so many different kinds of veggies, and you can even mix and match them.

I’m talking:

Carrots

Zucchini

Sweet potatoes

Cauliflower

But it’s these broccoli fritters that have my heart. Seriously. They’re easy peasy. Because of no grating necessary. Just chop your broccoli and combine it with your choice of cheese. I’ve used mozzarella here. Then strain in the remainder of your ingredients, mix well, and shallow fry in the shape of mini pancakes. Then dip into the sauce that’s made from dijon mustard and honey and enjoy!

Broccoli has never tasted this good.

All right, let’s gather the ingredients to make these:

  • broccoli
  • cheese (mozzarella or cheddar)
  • egg
  • milk
  • unbleached flour
  • baking powder
  • salt
  • extra virgin olive oil

You didn’t think I would leave you to eat these on their own, did you? Of course I wouldn’t. These fritters are perfectly complemented with this simple Honey Mustard Sauce that takes just a quick whisk to pull together. You’ll love how well they pair, you’ll be making it for more and more appetizers as a dip.

And to make the sauce, you’ll need:

  • Dijon mustard
  • honey
