Isn’t it amazing how certain foods cause this incredible spark of nostalgia? They allow us to relive incredible moments from our past. Unlike many stored memories, food memories engage all five of our senses. The smell, the way it feels, the sound it makes, the way it looks, and of course the taste can take us right back to a place we’ve stored in our brains for years.
Blackberries. They’re pretty nostalgic for me. I remember my mom would have me go pick blackberries often while I was little. They were absolutely free to pick, unlike the many other berries. But the thing with blackberries? They were so hard to pick! The branches of those berries had more thorns than you could count. And while you thought you were bringing back a bunch of blackberries, I guarantee you were bringing back way more scratches.
Every time I bring home blackberries, I think of the times I picked them. And then I’m relieved that I can go to my local market, and just buy them.
So I bought a bunch this past weekend. And while I was going down memory lane, I realized what I wanted to do with them. Toss them into a hearty salad. With chicken and fresh mozzarella. And dress it up with a yummy balsamic glaze.
This salad is so incredibly delicious! It’s healthy, fulfilling, and really easy to make! It’s a pretty simple recipe but it’s oh so flavorful!
You’ll get a generous helping of Vitamin A, Vitamin C, calcium, and iron from the blackberries.
Important protein from the chicken.
And essential vitamins, minerals, and fiber from the mixed greens.

So what goes into this salad?
Chicken breast strengthens your bones and supports heart health.
Blackberries are packed with vitamins K and C.
Mixed greens contain beta carotene, calcium, and phytonutrients.
Mozzarella cheese has a lower calories and sodium count than other cheeses. It has probiotic bacteria, too.
Along with those ingredients, you’ll need:
- balsamic vinegar
- extra virgin olive oil
- garlic clove
- black pepper
Best Simple Balsamic Chicken Blackberry Salad
- 1 chicken breast, boneless & skinless
- ⅛ cup balsamic vinegar
- ⅛ cup extra virgin olive oil
- 1 clove garlic, minced
- 1 pinch salt
- 1 pinch black pepper
- ½ cup blackberries
- ½ cup mixed greens
- 2 oz fresh mozzarella, cut any way you like
- Sprinkle a pinch of salt and pepper both sides of one boneless & skinless chicken breast. Combine 1/8 cup of balsamic vinegar, 1/8 cup extra virgin olive oil and 1 minced garlic clove. Add chicken to the mix and let it marinate for 10 minutes.
- Sauté chicken until cooked.
- Arrange 1/2 cup mixed greens, 1/2 cup blackberries and cut fresh mozzarella cheese into a serving bowl. Add the cooked chicken on top and enjoy!
